谷胱甘肽S-转移酶（GST) 具有催化还原型谷胱甘肽（GSH) 与二硝基苯（CDNB) 结合的能力，通过测定底物GSH在单位时间内与二硝基苯结合的速率来表示酶的活力，反应剩余的GSH与二硫代双二硝基苯甲酸（DTNB) 作用生成的黄色硫代硝基苯甲酸阴离子（TNB) ，测定该阴离子浓度来计算出GSH的减少量。从而推算出谷胱甘肽S-转移酶（GST) 的酶活力。
